Tatar-Style Azu with Fermented Cucumbers

A hearty beef stew with potatoes and fermented cucumbers in tomato sauce, a classic dish for a family lunch.

Ingredients

Method

  1. Cut the beef into small pieces and fry in vegetable oil until golden brown.
  2. Add the onion, sliced into half-rings, and fry together with the meat for another 5 minutes.
  3. Pour in a little water, add the tomato paste and bay leaf, and simmer covered for 40 minutes.
  4. Cut the potatoes into batons and fry separately until golden.
  5. Cut the cucumbers into strips and add them to the meat along with the fried potatoes.
  6. Pour in a little broth or water to cover the contents and simmer for another 15 minutes.
  7. A few minutes before it's done, add the crushed garlic and season with salt.
  8. Serve hot, sprinkled with chopped herbs.
