Borscht with Sauerkraut

A traditional Ukrainian borscht with fresh beef and sauerkraut with carrot — a hearty, warming soup for a family meal.

Ingredients

Method

  1. Cut the beef into chunks, cover with cold water and simmer for 1 hour on low heat.
  2. Peel the beetroot, grate it finely and add to the broth.
  3. Finely chop the onion and sauté it in oil, then stir in the tomato paste.
  4. Pour the sautéed onion with tomato paste into the broth.
  5. Add the sauerkraut with carrot to the soup and simmer for another 15 minutes.
  6. Taste and adjust the salt if needed.
  7. Ladle the borscht into bowls and serve with sour cream.
