Open sandwiches with herring on Tallinn bread

A traditional Scandinavian appetizer with rich fish that is often prepared for festive tables or as a light lunch.

Ingredients

Method

  1. Cut the herring into finger-sized pieces and soak in cold water for 10 minutes
  2. Slice the onion into very thin half-rings and pour lemon juice over it
  3. Lightly toast the bread so it does not become soggy
  4. Spread a thin layer of butter on each slice of bread
  5. Place a few pieces of herring and some marinated onion on the butter
  6. Sprinkle fresh dill and black pepper on top
  7. Place the finished sandwich on a plate and serve immediately
