Pearl Barley Soup with Mushrooms
A traditional Eastern European soup made with pearl barley and dried forest mushrooms, perfect for cold weather.
Ingredients
- Pearl barley groats SKVIRYANKA 200 g
- Dried mushrooms 50 g
- Onion 1 pc
- Carrot 1 pc
- Potatoes 3 pcs
- Water 2 l
- Salt to taste
- Vegetable oil 2 tbsp

Method
- Soak dried mushrooms in hot water for 30 minutes, then chop them and strain the liquid
- Chop the onion finely, cut the carrot into matchsticks, and dice the potatoes
- Heat the oil in a pot and sauté the onion until golden
- Add the carrot and potatoes, stir and simmer for 5 minutes
- Pour in water along with the mushroom broth, bring to a boil and add rinsed pearl barley
- Add the mushrooms, reduce heat and cook for 40-45 minutes until the barley is tender
- Season with salt and cook for another 5 minutes
- Serve hot, optionally garnished with fresh herbs
