Salad with Smoked Fish and Sauerkraut

A fresh salad with smoked mackerel, sauerkraut with carrot and boiled potatoes — a light appetizer to serve with hot dishes.

Ingredients

Method

  1. Boil the potatoes until tender, cool and cut into cubes.
  2. Boil the eggs, peel and chop into small pieces.
  3. Clean the smoked mackerel from bones and skin, break into chunks.
  4. Gently squeeze the sauerkraut with carrot to remove excess liquid.
  5. Finely chop the green onion and mix with vegetable oil and apple vinegar.
  6. In a large bowl, combine potatoes, eggs, fish, sauerkraut with carrot and half of the green onion.
  7. Dress the salad with the oil and vinegar mixture, sprinkle with black pepper and remaining green onion.
