Classic Chicken Tabaka

Crispy flattened chicken pan-fried under a weight — a classic Caucasian dish for a family dinner.

Ingredients

Method

  1. Cut the chicken along the breastbone and flatten it, lightly pounding with a rolling pin.
  2. Rub the chicken all over with the chicken tabaka seasoning and let it rest for 15 minutes.
  3. Heat the oil in a heavy-bottomed skillet.
  4. Place the chicken skin-side down, cover with a flat plate and put a weight on top (a jar of water).
  5. Fry for 15-18 minutes until golden brown, then flip and repeat on the other side.
  6. Crush the garlic and mix with sour cream, serve as a sauce with the finished chicken.
