Chicken Tabaka with Sweet Potato Puree
A classic Georgian dish featuring crispy flattened chicken and aromatic sweet potato puree, perfect for a family dinner.
Ingredients
- Whole chicken 1 pc
- Chicken Tabaka seasoning AVOKADO 25 g
- Sweet potato 600 g
- Butter 3 tbsp
- Onion 1 pc
- Salt and black pepper to taste
- Water 200 ml

Method
- Rinse the chicken and pat dry with paper towels, then place it breast-side down on a cutting board.
- Cut along the backbone and flatten the chicken by breaking the joints with your hands.
- Rub the chicken tabaka seasoning all over the bird and let it sit for 15 minutes.
- Heat oil in a skillet and fry the flattened chicken for 12-15 minutes on each side until golden brown.
- Dice the sweet potato and finely chop the onion, then sauté them in butter in another skillet.
- Add the sweet potato to the onion, pour in hot water, cover with a lid and cook for 15 minutes.
- Mash the sweet potato with a fork into a puree, drizzle with butter, and season with salt and pepper.
- Slice the chicken into portions and serve hot with the sweet potato puree.
